Rotisserie Chicken Chow Mein
We’ve previously shared our regular Chicken Chow Mein recipe, but one of the easiest shortcuts for making this recipe in a flash is using rotisserie chicken.
Simply skip all the steps involving cooking the chicken and add your rotisserie chicken into the noodles near the end, just before adding your sauce.
You might need to adjust the salt content in the sauce since rotisserie chicken is typically already quite salty, but besides that, boom – you have an easy and delicious bowl of chow mein using rotisserie chicken leftovers!
Cold Shredded (Rotisserie) Chicken
The relatively unpalatable name of this dish doesn’t sell it too well, but if you’re looking for an easy and delicious recipe that uses rotisserie chicken leftovers, make sure to whip up a batch of this classic dish which is perfect for hot summer nights.
Made up of juicy chicken, crunchy veggies and a light, refreshing sauce, you might not think of yourself as a cold chicken fan, but one taste of this (with some rice or noodles) and you’ll be converted.

Simply omit the first part of the recipe where you prep/cook your chicken, and instead use some chopped leftover rotisserie chicken when you add your vegetables and other ingredients into the rice.
