Facing the (delicious) problem of having too many rotisserie chicken leftovers? In need of tasty recipes that use rotisserie chicken as a key ingredient?

Look no further!

As a Chinese family living in North America, our love affair with Costco knows no bounds… but one of our favorite things to buy every time is a rotisserie chicken – perfect for adding into meals, or sneaky snacking throughout the day.

With a rotisserie chicken in hand, you can easily whip up a multitude of quick and delicious Chinese meals, from chicken chow mein and fried rice to cold shredded chicken.

So if you ever grow tired of devouring rotisserie chicken with your bare hands (which we do often), then here are some tasty (mostly) Chinese recipes that can help you up your rotisserie chicken leftover game.

Rotisserie Chicken Chow Mein

We’ve previously shared our regular Chicken Chow Mein recipe, but one of the easiest shortcuts for making this recipe in a flash is using rotisserie chicken.

Simply skip all the steps involving cooking the chicken and add your rotisserie chicken into the noodles near the end, just before adding your sauce.

You might need to adjust the salt content in the sauce since rotisserie chicken is typically already quite salty, but besides that, boom – you have an easy and delicious bowl of chow mein using rotisserie chicken leftovers!

Cold Shredded (Rotisserie) Chicken

The relatively unpalatable name of this dish doesn’t sell it too well, but if you’re looking for an easy and delicious recipe that uses rotisserie chicken leftovers, make sure to whip up a batch of this classic dish which is perfect for hot summer nights.

Made up of juicy chicken, crunchy veggies and a light, refreshing sauce, you might not think of yourself as a cold chicken fan, but one taste of this (with some rice or noodles) and you’ll be converted.

Rotisserie Chicken Fried Rice

Our recipe for easy Chicken Fried Rice can be made even easier through the usage of rotisserie chicken leftovers!

Simply omit the first part of the recipe where you prep/cook your chicken, and instead use some chopped leftover rotisserie chicken when you add your vegetables and other ingredients into the rice.

Rotisserie Chicken Instant Pot Congee

We’ve previously shared a basic foundational recipe for instant pot congee, which creates a comforting and nourishing congee in 10 minutes. Of course, this base recipe consists only of rice and water, so we recommend adding your fix-ins of choice to jazz it up.

One super easy way to jazz it up? Rotisserie chicken leftovers! Simply shred your leftover rotisserie chicken and chuck it in the congee before serving. Mm mmm mm!

Rotisserie Chicken and Corn Egg Drop Soup

Whipping up a giant pot of chicken and corn egg drop soup is the perfect way to warm up when cold weather hits, but you can actually use rotisserie chicken leftovers to speed up the process even further!

Simply sub the chicken in the recipe for some rotisserie chicken leftovers, and enjoy.

(Microwave) Rotisserie Chicken Claypot Rice

We’ve previously shared our Microwave Claypot Rice recipe, which is an easy blank slate to dress with any toppings you desire.

While our original recipe uses Chinese sausage and egg, you could easily substitute those for some rotisserie chicken leftovers near the end of the cooking process for an easy and hearty meal… straight from the microwave.

Rotisserie Chicken Curry

This last pick isn’t quite Chinese, but it’s so delicious and easy, I had to include it.

For a dreamy comfort dish that uses rotisserie chicken leftovers, why not whip up a batch of rotisserie chicken curry?

This easy version of Japanese-style curry uses rotisserie chicken to speed up prep, and the results are mindblowingly delicious when paired with rice.

Full recipe coming soon.
