Luckily, chicken chow mein isn’t difficult to make at home, and is easily adaptable to your own preferences (and what you have left in the fridge!)

Ingredients for Our Easy Chicken Chow Mein Recipe

For the chicken:

  • 200g chicken (cut into thin slices)
  • 1 tsp soy sauce 
  • 1 tsp cornstarch, mixed with 1 tbsp water
  • 1 tsp cooking wine
  • 1/3 tsp baking soda 

For the noodles:

  • 250g chow mein
  • Water (for boiling)

For the rest of the chow mein:

  • 4 tbsp oil
  • 50g (4 tbsp) thinly sliced onion
  • 50g (4 tbsp) thinly sliced carrot
  • 50g (4 tbsp) thinly sliced celery
  • OPTIONAL: Additional veggies of your choice e.g. beansprouts or cabbage – we used broccoli in the photos below!
  • 1 tbsp soy sauce
  • 1/2 tsp dark soy sauce
  • 1 tsp oyster sauce
  • 1 tbsp water
  • 1/2 tsp chicken powder
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1/4 tsp pepper powder
  • 1 tsp cooking wine
  • 50g (4 tbsp) green onions cut into 1/2 inch

Step by Step Instructions for Our Chicken Chow Mein Recipe

This tasty takeout classic is easy to whip together for a quick, weeknight meal. Here are the step by step instructions!

Preparing the chicken:

Slice chicken into thin slices, about 3cm wide.

Mix the chicken with soy sauce, cornstarch, water, cooking wine and baking soda. Ensure the chicken is thoroughly covered and then leave for 30 minutes.

NOTE: Before stir frying, add 1 tbsp of oil into the chicken and mix well.

Preparing the noodles:

Cook the chow mein as per the package’s instructions. We usually boil it for 1 minute, before dunking it in cold water, and then draining/letting it dry.

Boil a pot of water. Add your veggies into the boiling water with 1 tsp salt and 1 tsp oil. Cook for 1 minute, remove the veggies from the pot and dunk in cold water, then drain and set aside for later.

Putting chow mein together:

Heat your pan until very hot, then add oil.

Add chicken and stir to prevent slices from sticking together. Stir fry for over medium heat about 30 seconds. Remove and set to the side.

Add onion, carrot, and celery into the wok, and stir fry for 30 seconds.

Add your chow mein noodles, then stir fry for one minute.

Add chicken (and any additional veggies) into the pan.

Add soy sauce, dark soy sauce, oyster sauce, water, chicken powder, sugar, salt, pepper powder and cooking wine, then mix until the sauce is well incorporated into the noodles.

Add your green onion.

Mix again for about 15 seconds, then the noodles are ready to put on a big plate and serve!

  5. Add soy sauce, dark soy sauce, oyster sauce, water, chicken powder, sugar, salt, pepper powder and cooking wine, then mix until the sauce is well incorporated into the noodles.
  6. Add your blanched veggies and green onion.
  7. Mix again for about 15 seconds, then the noodles are ready to put on a big plate and serve!

Notes

Feel free to add your own favourite vegetables into the chow mein! This meal is a great opportunity to use up what's left in your fridge.
