Besides being delicious and quick to make, fried rice happens to be one of the most adaptable dishes in Chinese cuisine, making it the perfect meal to whip up when you have leftovers to get rid of (or random bits in your fridge that need to be used).

Ingredients for Our Chicken Fried Rice Recipe

For the chicken:

  • 200g chicken breast, cut into 1/2” inch cubes
  • 1 tsp cooking wine
  • 1/2 tsp salt
  • 1 tbsp water
  • 1 tsp cornstarch
  • A pinch of white pepper
  • 1 tbsp oil (for the marinade)
  • 1 cup oil (for frying)

For the fried rice:

  • 70g mixed veggies
  • 500g warm rice
  • 2 eggs, beaten
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp chicken powder
  • 1/4 tsp white pepper
  • 1 tsp soy sauce
  • 1 tbsp diced green onion

Step by Step Instructions for Our Chicken Fried Rice Recipe

Chicken fried rice is easy to whip together for a satisfying and delicious dinner. Here are the step by step instructions!

30 minutes before cooking, cube 200g of chicken breast into 1/2 inch pieces, and marinate with your cooking wine, salt, water, cornstarch, white pepper and oil.

Heat and add a cup of oil into your wok.

Add your chicken into the wok and stir it around to ensure the pieces don’t stick to the bottom or to each other. After about a minute, add your mixed veggies in with the chicken for 30 seconds and cook until the chicken is no longer pink, and golden brown on the outside. From experience, this should take about two minutes.

Drain the chicken and vegetable mix, and set aside, leaving about a tablespoon of oil in the wok. 

Crack two eggs and beat them quickly in a bowl to mix, before adding it into the pan. The egg will cook quickly. 

Once the eggs start to solidfy, add your rice, and mix. Use a wooden spoon to stir the rice and separate clumps.

Add your veggies and chicken back into the pan and stir for about 30 seconds.

Add your salt, chicken powder, and white pepper, then stir, making sure to separate any more clumps.

Add soy sauce to taste (about 1 tsp, or more if you need!), then stir to ensure all the rice is evenly coated. 

Sprinkle your chopped green onions on top and mix. Be sure to test taste a bite and add salt/extra pepper/soy sauce as needed.

Pile the fried rice onto a plate and then serve.

Notes

To save time, your chicken can easily be subbed for rotisserie chicken leftovers, or any other protein you have lying around.
