Ingredients for Our Soy Sauce Eggs Recipe

  • 12 eggs, hard boiled (you can do more if you wish)
  • 1 tsp vegetable oil
  • 20g (1.5 tbsp) sliced ginger
  • 20g (1.5 tbsp) green onion (in 3” slices)
  • 5g (1 tsp) clove
  • 5g (1 tsp) star anise
  • OPTIONAL: 3 bay leaves
  • OPTIONAL: 1 cinnamon stick
  • 120g (1/2 cup) rock sugar or brown sugar
  • 250mL (1 cup) soy sauce
  • 1 tsp dark soy sauce
  • 600mL (20oz) water
  • 50mL (1.5 oz) cooking wine

Step by Step Instructions for Our Soy Sauce Eggs Recipe

These delicious soy sauce eggs couldn’t be easier to make. Here are the step by step instructions!

To prep your eggs, bring a pot of water to boil and hard boil them to your ideal doneness. Peel and set aside.

To prep your soy sauce marinade add one teaspoon oil in a large pot over medium heat, along with your sliced ginger. Stir fry for 30 seconds, and then add your green onion. Stir fry for another 30 seconds, until fragrant.

Add in your cloves, star anise, and bay leaves/cinnamon stick (if using), and stir fry for a minute.

Add your sugar, soy sauce, dark soy sauce, water, and cooking wine, and bring it to a rolling simmer.

Turn the heat off, and leave your marinade to cool off. Once the mixture is no longer hot, add your hard boiled eggs and leave them to marinate for at least four hours, or even better, overnight for the tastiest results.

After marinating, your eggs will make the perfect snack on their own, or a topping for your favourite Chinese rice dishes or Chinese noodle dishes.
