If you’re looking for a bottled version to have readily on hand, the Lee Kum Kee sweet soy sauce is actually really great… but making your own in a pinch couldn’t be easier, especially if you use this ultra quick recipe developed by Papa G.

An Alternative (More Laborious Recipe) for Sweet Soy Sauce

When I asked Papa G to make sweet soy sauce for our Cheung Fun, he went into his usual mysterious mastermind mode and proceeded to make two versions… Committing so much to the task, he even gave us a blind taste test.

Version 1 was presented above. The simple, no-fuss version of sweet soy sauce that takes all of one minute to make.

Version 2 is presented below. It takes a little more work, and involves frying up some aromatics before adding the key ingredients.

Funny enough, the majority of our family actually preferred the simpler version (Version 1) of the sweet soy sauce which we shared with you above.

But hey, everybody’s taste buds are different, and if you want a sweet soy sauce with maybe a bit more complexity in flavour, then you can give the more complicated version below a try.

So here’s what you’ll need for this more laborious version of sweet soy sauce:

  • 1 tsp vegetable oil
  • 10g ginger
  • 10g green onion
  • 10g onion
  • 1 tsp chicken powder
  • 1 tbsp sugar
  • 2 tbsp soy sauce
  • 6 tbsp water
  • OPTIONAL: A few drops of dark soy sauce

Heat the ginger, green onion, and onion in a pan with some oil and stir fry until fragrant. This should take about a minute

Then add 6 tbsp of water, turn your heat to low and let simmer for about 3 minutes until it has reduced to about 3 tbsp. Turn the heat off.

Remove the ginger, green onion, and onion, then add your 1 tsp chicken powder, 1 tbsp sugar, and 2 tbsp soy sauce. You can add a few drops of dark soy sauce for some extra dark colour. Bring to a boil and serve.

Store covered in fridge up to 3 weeks.
