Shrimp and Asparagus Stir Fry is a popular dish among Chinese home cooks consisting of crunchy asparagus and juicy shrimp, all covered in a light but flavourful sauce that pairs dreamily with rice.
While not as popular among Chinese restaurant visitors as classics like Beef and Broccoli or Kung Pao Chicken, this underrated dish makes for the perfect weeknight dinner, with lighter ingredients that will leave you satisfied, but not feeling like you’ve ingested ten million calories.

Ingredients for Our Shrimp and Asparagus Stir Fry Recipe
For the shrimp:
- 200g (10 pieces) peeled, headless shrimp
- 1/2 tsp cornstarch
- 1 pinch white pepper
- 1 pinch baking powder
- 1 pinch salt
- (Optional) 1/3 egg white
- 1 tsp oil
- 1 cup oil (for frying)
For the sauce:
- 1/2 tsp soy sauce
- 1/2 tsp oyster sauce
- 1/4 tsp salt
- 1 pinch white pepper
- 1/2 tsp sugar
- 1/2 tsp chicken powder
- 2/3 tsp cornstarch
- 1 tbsp water
For the rest of the dish:
- 280g asparagus, washed and cut into 2 inch pieces
- (Optional) 1/4 tsp baking soda
- 1 tsp oil
- 1 tsp sliced ginger
- 1 tsp sliced garlic (or two cloves)
- 1 stalk of green onion, cut into 1/3” chunks
- 5 thinly sliced pieces of carrot
- 1 tsp cooking wine
- 1 tsp sesame oil
Step by Step Instructions for Our Shrimp and Asparagus Stir Fry Recipe
This light yet flavourful dish is easy to whip together for a satisfying dinner. Here are the step by step instructions!
Mix your prawns with 1/2 tsp cornstarch, a pinch of white pepper, a pinch of baking powder, a pinch of salt, and 1/3 of an egg white (if using). Stir your mixture in one direction for 1-2 minutes. Add 1 tsp of oil and set aside.
Mix 1/2 tsp soy sauce, 1/2 tsp oyster sauce, 1/4 tsp salt, a pinch of white pepper, 1/2 tsp sugar, 1/2 tsp chicken powder, 1 tsp cooking wine, 2/3 tsp cornstarch and 1 tbsp water in a bowl. Set it aside.
Time to blanch your asparagus! Boil a pot of hot water. Add your asparagus, along with 1/4 tsp baking soda and 1 tsp oil.
Allow it to cook for 50-60 seconds, then remove it, submerge it in cold water and drain. Set aside for later.
Heat your pan/wok to medium heat and add one cup of oil. Bring it to about 250 degrees celsius then turn your heat off.
Immediately add your shrimp and stir for 20 seconds, or until you notice the shrimp changing colour.
Remove and drain the shrimp, leaving 1 tbsp of oil.
Turn your heat back up to medium, and then add in your ginger, garlic, green onion, and carrot (if using). Stir fry them for about 20 seconds, or until fragrant.
Add a teaspoon of cooking wine.
Turn your heat to high and then add your blanched asparagus.
Stir fry for another 30 seconds.
Add your prawns and then your sauce mixture.
Quickly toss everything together, and (when ready to serve), add a tsp of sesame oil and mix well.
Give everything a final toss to ensure all your ingredients are equally saucy.
Transfer your finished stir fry to a serving plate, and enjoy with rice!
