And while this dish is ordered en masse at Chinese restaurants across the world, it’s a little known secret that restaurant-quality beef and broccoli is pretty easy to whip up at home.

Ingredients for Our Beef and Broccoli Recipe

For the beef:

  • 250g sirloin or tenderloin beef
  • 1 tsp soy sauce
  • 3 tbsp water
  • 1 pinch of white pepper
  • 1 tsp cooking wine
  • 1 tsp cornstarch
  • 1/2 tsp baking soda
  • 1 tbsp oil
  • 1 cup oil (for frying beef)

For the broccoli:

  • 250g broccoli florets
  • 1/3 tsp salt
  • 1/3 tsp sugar
  • 1/3 tsp chicken powder
  • 1 tsp cooking wine

For the sauce:

  • 1/2 tsp soy sauce
  • 1/2 tsp oyster sauce
  • 1 pinch white pepper
  • 1/2 tsp dark soy sauce
  • 1/2 tsp corn starch, mixed with 1 tsp water
  • 1 tsp sesame oil

For the rest of the dish:

  • 1 tsp sliced ginger
  • 1 tsp sliced garlic
  • 1 green onion stem, sliced into 2cm pieces
  • (Optional) 4-8 pieces of thinly sliced carrot

Step by Step Instructions for Our Beef and Broccoli Recipe

Beef and broccoli is a mouthwatering dish that is easy to whip together for a satisfying dinner (paired with rice or noodles). Here are the step by step instructions!

To prepare the beef at least two hours in advance, cut 250g of beef into thin slices about 1.5 inch wide, ensuring you cut against the grain.

In a bowl, mix together your beef, soy sauce, half of your water (1.5 tbsp), a pinch of white pepper, 1 tsp of cooking wine, 1 tsp of cornstarch, and 1/2 tsp of baking soda. Stir it all together (with your hands if you want to do it the traditional restaurant way!), and set it aside to marinate.

30 minutes later, add the second half of your water (1.5 tbsp) to the mix, stir it again and set it aside to marinate longer (about 2h total is ideal).

While your meat is marinating, prep your vegetables by chopping up 250g of broccoli into bite-sized florets, as well as your ginger into thin slices, garlic in thin slices, and green onion in 2cm chunks.

To prep your sauce, mix 1/2 tsp soy sauce, 1/2 tsp oyster sauce, a pinch of white pepper, and 1/2 tsp dark soy sauce in a bowl. Set it aside.

When you’re ready to start cooking, we’ll start with blanching your broccoli first. To do this, boil a pot of hot water, then add your broccoli. Allow it to cook for 50-60 seconds, then remove it, submerge it in cold water and drain, then set it aside for later.

Put your pan/wok on medium heat, then add 1 tablespoon of oil.

Add in your blanched broccoli, along with a tsp of cooking wine.

Stir fry for 30 seconds. Add 1/3 tsp of salt, 1/3 tsp of sugar and 1/3 tsp of chicken powder, then toss your broccoli until thoroughly mixed.

Stir fry until your desired doneness (about 30 seconds is our sweet spot), then transfer the broccoli onto a serving plate.

Next, let’s do the beef! Before cooking your beef, add 1 tbsp of oil into your beef mixture. This will ensure the pieces don’t stick to each other or the pan when you start frying.

Next, heat your pan/wok to medium heat and add about one cup of oil. Bring it to about 250 degrees celsius then turn your heat off. Immediately add your beef and stir for 20 seconds, or until it changes colour.

It’s okay if the beef is still a little red because we’ll finish cooking it later.

Remove and drain the beef, leaving 1 tbsp of oil.

Turn your heat back up to medium, and then add in your ginger, garlic, green onion, and carrot (if using). Stir fry them for about 30 seconds, or until fragrant.

Add your beef and then 1 tsp of cooking wine.

Add in your sauce mixture. Feel free to give it a taste test at this point to see if the sauce is how you like it, and add seasonings accordingly.

Add your cornstarch and water mixture, then quickly toss everything together.

When ready to serve, add a tsp of sesame oil and mix well before transferring your beef to the serving plate.
