Clay pot rice (AKA Bo Zai Fan) is an iconic Hong Kong comfort food consisting of fluffy rice cooked in a clay pot, topped with whatever proteins you have on hand, along with a hefty drizzle of soy sauce.
Sure it doesn’t sound like much, but in many Cantonese households, it’s the go-to lazy meal that can be whipped up in a hurry, and therefore a huge part of many childhoods… mine included!
And while Clay Pot Rice is especially revered for its speed of preparation and the charred bits of crispy rice you get at the bottom, I personally always dreaded getting those rice bits stuck in my teeth…
So when Papa G revealed he had a new, even quicker way to make clay pot rice, all with perfectly fluffy (uncharred) results, I was intrigued.
Hence the star of today’s recipe: Hong Kong style Clay Pot Rice….. made in a microwave.
It’s quick, it’s easy, and it’s one of the most satisfying meals you can make by pressing a few buttons.

Ingredients for Our Microwave Clay Pot Rice Recipe
- 200g rice
- 350mL water
- 1/2 tsp oil
- 1/3 tsp salt
- 1/3 tsp chicken powder
- 80g (2 pieces) Chinese sausage, sliced into 2cm slices (or your protein of choice)
- 1 egg
- 1 tsp toasted sesame oil
- 1 tbsp soy sauce
- 1 tsp green onion
- 1 tsp cilantro (optional)
Step by Step Instructions for Our Microwave Clay Pot Rice Recipe
This tasty rice dish may be the most delicious thing you ever prepare in a microwave. Here are the step by step instructions!
Add your rice into a clay pot (or bowl). Give the rice a rinse.
Add 350mL water into your rice (or slightly less if you feel like there’s still quite a bit of moisture in your rice after washing). If you want to be extra precise, your goal should be to have the rice and water combined to weigh 550g.
Add 1/2 tsp oil, 1/3 tsp salt, and 1/3 tsp chicken powder into your clay pot/bowl.
Cover your pot/bowl and put it into the microwave. Microwave for 5 minutes.
It’ll be hot, so use an oven mitt or tea towel to take the lid off your rice, open it up, and give everything a stir with a fork.
Add your Chinese sausage (or protein of choice).
Put the lid back on, and microwave for one more minute.
Then, open your clay pot back up, add an egg, and microwave for another minute.
Top with some toasted sesame oil, soy sauce, green onions and (optionally) cilantro. Enjoy!

Ingredients
