Crispy chow mein topped with sauce is one of our favourite Chinese dishes of all time… and it’s a surprisingly easy one to make for yourself at home.
This stunner of a dish features on most Cantonese restaurant menus – usually as a house special that’s topped with the chef’s own special blend of seafood, meat & veggies.
Of course, two factors remain consistent: perfectly crunchy noodles and a dreamy saucy stir fry to go on top. With those two things in place, you really can’t go wrong.
In this crispy and crunchy chow mein noodles recipe, we’ll be topping our noodles off with one of our favorite dishes of all time: beef and broccoli.
Of course, feel free to add in your own preferred veggies and proteins – it will be delicious all the same.

Ingredients for Our Crispy and Crunchy Chow Mein with Beef and Broccoli Recipe
For the Noodles:
- 300g Chinese egg noodles
- 3 tbsp oil
For the Beef:
- 200g of beef
- 1 tsp corn starch
- 1/2 egg white
For the Rest of the Dish:
- 200g Broccoli florets
- 1/3 tsp salt
- 1/3 tsp sugar
- 1/4 tsp chicken powder (optional)
- 1/2 tsp oyster sauce
- 1/2 tsp light soy sauce
- 1/2 tsp dark soy sauce
- 275 ml chicken broth (or water)
- 2 tsp cornstarch (mixed with 2tbsp water)
Step by Step Instructions for Our Crispy and Crunchy Chow Mein with Beef and Broccoli Recipe
This tasty noodle dish is easy to whip together for a satisfying dinner. Here are the step by step instructions!
To prep your noodles, submerge your egg noodles in warm water for 40 min and then drain and set aside.
To prep your beef, place your beef in a large bowl with half an egg white, 1 tsp cornstarch, 1 tsp soy sauce and 1 tbsp water. Give everything a good mix by hand until the beef is covered in your mixture, then leave it to marinate for at least 30 minutes.
To prep your veggies, chop your broccoli into bite-sized florets.
When you are ready to start cooking, we’ll begin with our noodles first. Heat up your pan/wok until hot, add 2 tbsp oil and put your noodles in (it’s okay if it’s like a solid block rather than loose noodles).
Use chopsticks to move this block of noodles around slightly so it doesn’t get stuck to the bottom of the pan, but allow it to remain in a block formation until 1 side is crispy.
Once golden brown, flip it and then pan fry the other side until golden brown. Let the oil drip from noodles and place it on a large serving plate/dish.
Clean your wok, then add another tbsp of oil.
Add your marinated beef mixture and let it cook on an even layer until about 80% done, and then set aside for later use.
Add all remaining ingredients (broccoli, water, soy sauce, oyster sauce, broth, etc.) and cook for 1 minute until the broccoli is soft
Add your water and starch mixture over the broccoli, then continue mixing.
After your sauce is nice and thick, add beef in, and stir until thoroughly mixed with everything else.
Finally, pour your beef and veggie mixture on top of the noodles and serve. Eat immediately for the best results (before our noodles get soggy).
